Wild Goose Leg is a delicious and sustainable piece of meat, a pity it is not eaten very often. The legs are most delicious if you let them cook slowly until the meat can be picked off the bone. Shot by hunters in the Netherlands.

cider vinegar
bay leaf
black pepper

  • Melt the fat bacon cubes in a frying pan and sear the chops all over.
  • Add coarsely chopped carrot and leek and fry briefly.
  • Add stock (or half stock/half red wine) and 2 tbsp cider vinegar so that the meat is half covered.
  • Then season the legs with bay leaf, cloves, peppercorns and salt.
  • Stir the legs regularly.
  • Let the legs cook on a very low heat for at least 5 hours (keep below 100°C).
