Organic German knuckle (eisbein)
In Germany, it is a national dish and known as 'Eisein'. In the Netherlands, the top leg usually goes into pea soup.

- Remove the egg roll from the freezer and leave to thaw in the fridge.
- Place the egg roll in warm water to which Celtic sea salt, peppercorns, onion and leek have been added.
- Let the egg roll cook on a low heat for about 2 hours. Make sure that the meat is completely submerged in the water.
- Remove the beef from the water, dry it and bake the leg in the preheated oven at 180°C for about 45 minutes, until brown all over. Make sure that the rind does not become too hard, which would be detrimental to the flavour.
