Sheep sausage
This grass-fed sheep sausage is prepared according to traditional methods in our own sausage factory. The sausages are made from mutton mince and a fine blend of herbs. The herb mix for these sausages is compiled by Onze Woeste chef/ butcher. He uses only 100% organic herbs for this mixture and he salts the meat with only Celtic sea salt.

100% grass-fed mutton, pork gut, nutmeg, white pepper, onion, ginger, allspice, cloves, coriander and Celtic sea salt.


  • Take the meat out of the freezer and let it thaw in the fridge.
  • Rehydrate it first: Fill a pan with hot water and put the sausages in it and bring it to the boil.
  • Remove the sausages from the pan and pat dry with a piece of kitchen roll.
  • Melt the butter in the pan.
  • Once the foam has disappeared, fry the sausages in the butter.
  • Fry the meat for about 2 minutes until brown on medium-high heat.
  • Add half a cup of water to the butter and cook on a low heat for another 10 minutes.
