Especially for Easter, our wild butcher Léon has made lenderollades. This rolled roast is made from sirloin steak from grass-fed cattle and is easy to prepare. Léon makes all his own herb mixes and uses organic and biodynamic herbs from the Blue House.

Ingredients:
100% grass-fed beef, nutmeg, white pepper, onion, ginger, allspice, cloves, coriander, Celtic sea salt.

Preparation:

  • Take the roll from the freezer and let it thaw in the fridge.
  • Melt butter in a frying pan and sear the roast on a high heat.
  • Preheat the oven to 270 degrees and as soon as you place the roast in the oven, turn it back to 95-100 degrees.
  • Place the roast in a roasting tin in the oven and take it out when the core temperature is 40-45 degrees Celcius (±45minutes). Turn it now and then.
